Oldwick Shepherd -
We've been making Oldwick for many years and it has become a national favorite. It is a raw sheep's milk cheese made in the style of many of the Ossau-Irraty cheeses of the French Basque- Pyrennes. We make it right after the sheep go out to pasture in mid April and continue thru October. It is aged in our cave for a minimum of 3 months but the current wheels are older and just perfect. It is a table cheese but the texture is creamy and smooth with a nutty, cavey aroma. Oldwick Shepherd is available in 1-lb, 2-lb or a whole wheel which is approximately 5-lbs. Shelf life is very good in a refrigerator. Keep it wrapped in plastic wrap to avoid drying. Throw away the plastic every time it is opened.





Shepherd's Basket -
Made from 100% raw sheep's milk and aged for a minimum of 4 months our Shepherd's Basket resembles the Manchego form and may taste like a non smoked Idiazabal or a Manchego Viejo. The texture is a bit more grainy then Oldwick and the taste a bit deeper. In the Spanish basque Pyrenees you get a plate of this kind of cheese with a lump of Membrillio i.e. Quince paste. It is available in 1-lb, 2-lb or a whole wheel which is approximately 4-5-lbs. Same if not better keeping qualitites then Oldwick.





Smokey Shepherd -
Smoked over Applewood and made from 100% raw sheep's milk, our "Smokey" is an addictive cheese. Being anti-smoked ourselves we hesitated for years before subjecting perfectly good sheep cheese to all of that smoke. However, learning the method from the Basque who smoke a majority of their Idiazabal tought us that there is a place for this product on the cheese platter. The greasy brown rind and the smooth pate accompanied by a hint of real smoke has converted us. It is available in 1-lb, 2-lb or a whole wheel which is approximately 4-5-lbs. The best keeping quality of all cheese.





Califon Tomme -
A simple and hearty mixed milk cheese with a sticky creamy consistency similar to a raw milk farmhouse gouda. We thought that this would be a back shelver but the popularity has forced us to make several thousand pounds this year. Regardless, we ask that you order no more then a 1/4 to 1/2 of a wheel. It is available in 1-lb, 1/4 wheel or a 1/2 of a whole wheel. Entire wheel is 12+ lbs. keeps nicely if not allowed to dry.
