  Unfortunately, we don't ship fresh Ricotta. You can find this product in our shop in New Jersey (Long Valley) OR in our Shop in Park Slope (Brooklyn).
  
  We will start milking our sheep next week ! Fresh Ricotta will be on our shelves then...

  Hi!
  
  Quick question--I have an intolerance to casein, but not to whey protein. I have read that I should be able to eat real ricotta without a problem. Does your ricotta have casein in it?

  True Ricotta is made from whey proteins (lacto albumins) which contain no casein. That is our method of making it.
  At times we may add 5% whole sheep milk to the whey to increase yield but not in the late fall/winter when we are almost finished with our milk supply as the sheep are dried off.
